Explanation: The composition of this rework or
salvage ingredient is calculated and entered for use in appropriate
formulas. With this in mind, Production Wizard™ provides protection
against unwanted allergens getting into a product. If the current
formula does not allow, for example, the addition of
egg yolk solids, Production Wizard™ will not allow its use in the
formula. This is in part due to the "Rework Calculator"
determining the amount of egg yolk solids in the salvage material. If the
amount of egg yolk solids is greater than zero (or greater than some
amount configured by the administrator), the salvage will not be allowed
in the formula. This is much more effective than a standard practice in
the industry - measuring total
solids and fat then limiting salvage usage to 10% in the formula. |
